Update: Buttermilk’s Kitchen has announced a Wednesday, Aug. 29, in Patchogue Village. The announcement was made on the luncheonette’s Facebook page.

The much-anticipated opening of Buttermilk’s Kitchen is drawing near.
The owners are eying an early August opening on West Main Street in Patchogue, next door to the new Local Burger Co.
“We’re trying to get open within the next two weeks,” a Buttermilk’s co-owner, Vincent Prestigiacomo, told GreaterPatchogue Tuesday.
Prestigiacomo is opening Buttermilk’s with three partners, all of whom have extensive restaurant experience on the island, he said.
“Together, with our experience combined, we’ll be opening a very elaborate and beautiful, breakfast and lunch-themed restaurant,” he said. “We’re doing farmhouse meets Bellagio Hotel [in Las Vegas]. It’s basically a farmhouse with chandeliers.”
“Farmhouse chic,” said partner Alicia DiStefano.
The ownership group is rounded out by Albert Dandrea and Joseph Governale.
The interior space is 3,000 square feet and seats 90. As for the food, Buttermilk’s will be using all-organic, cage-free eggs. The menu will feature an assortment of salads and wraps. But its feature dishes will largely involve pancakes.
“We have a signature pancake recipe that no one has on Long Island,” Prestigiacomo said.
And, there will be an array of craft beer offerings.
Lastly, Buttermilk’s will be serving up pies by the slice from the renowned Briermere Farms in Riverhead.
“No one else can offer that on Long Island,” Prestigiacomo said. “We’ll have blueberry, rhubarb pie, apple crumb. It’s going to be insane.”
