Hersh and his wife, Rachel, opened their first restaurant, Rumba, in Hampton Bays in 2010 and followed that up with Cowfish just a short boat ride away. RHUM, which features Caribbean-inspired cuisine, opened in December 2016 in Patchogue — and to much fanfare.
The tri-level RHUM also offers rooftop dining, a first for the village. “We created that to try to be a tropical oasis,’ says David Hersh, “something you might see in South Beach, Miami, or in Key West …”
